Today is Club Mom’s Grand Opening!

We are so thrilled to announce the Grand Opening of Club Mom (http://www.ClubMomLI.com) in Huntington, Long Island, NY! We will be working with them by coaching moms to create great easy meals. Our classes will start in March – we’re hoping to have a large turn-out so we can not only share our food fun online, but be out in “real life” with you!

To start the grand opening week off on a sweet note, Joe and I baked his favorite buttery sugar cookies iced with my favorite icing. We had over 500 cookies ready to go in just a few hours so you know it was simple once we got in a groove.

To make the icing, start with one cup of confectioner’s sugar, add about 1 tablespoon of milk, and about a half-teaspoon vanilla extract and mix – add more milk to make thinner if you like. Add more vanilla if you like more vanilla punch! You can substitute the vanilla for any extract flavor you prefer – to make a lemon icing, I use a teaspoon of lemon juice. If you want to “brand” or theme your cookies, you can play with color and add food coloring as we did.

We’re also going to help them kick-off their weekly “Mom’s Night Out” with some savory treats that we’ll also share with you then.

      Here’s a super sugar cookie that will make you smile:
      Ingredients: 3 cups all-purpose flour, 1 tsp. baking powder, 1/2 tsp. salt, 1 cup butter, 1-1/2 cups sugar, 2 large eggs, 1 tsp. vanilla extract, and your choice of colored sugar or sprinkles.

      Mix sugar & butter together. Add eggs & vanilla extract. Continue to mix for another 2 minutes or until it looks creamy. Add baking powder, salt & flour. Mix together for another 2 minutes – don’t overmix!

      Shape into a log and wrap in heavy-duty plastic wrap. Refrigerate until firm, at least 2 hours or put in the freezer for 1 hour.

      Slice the log into 1/2-inch thick rounds. Sprinkle with colored sugar or sprinkles if desired. Arrange the cookies on baking sheets, spacing evenly, and bake at 350° until lightly browned, about 8 to 10 minutes. Remove from the oven, allow to cool slightly, then remove the cookies from the sheets. Cool completely on wire racks before serving.
