We’ve got the recipe for Silver Linings Crabcake, our take on Silver Linings Playbook.
Ingredients: 1/4 cup finely diced red bell pepper, 1/4 cup finely diced yellow bell pepper, 4 scallions finely diced, 2 tbsp. chopped fresh parsley (flat/Italian/plain – not curly), 8 oz. lump crabmeat, 1 egg, 1-2 cups plain breadcrumbs, olive oil (can use spray), 1/2 tsp-ish cayenne pepper, salt & pepper to taste
Directions: Preheat oven to 375°. Mix peppers, scallions, parsley, crabmeat, egg, 1-2 heaping tsp. plain breadcrumbs, cayenne pepper, salt & pepper. Prepare muffin tin with silver muffin/cupcake liners. Place remaining breadcrumbs in a bowl. Take a spoonful of crab cake mixture and coat with breadcrumbs, forming a ball. Spritz or brush olive oil on each and add to muffin liners. Bake for about 15 minutes until golden. Note: If you’d rather fry them in oil on the stove, do not add a spritz/brush of olive oil & proceed. Then serve in silver muffin liners.
