Ingredients: 1 mango cubed , 3-4 cloves garlic diced, 1/2 cup fresh cilantro chopped, 1/4 cup fresh parsley (flat/plain/Italian) chopped, 1/2 cup raisins, 1 diced jalapeño pepper, 1 small tomato chopped, 1 lime’s juice, 1 cup quinoa, olive oil, salt & pepper
Directions: Prepare quinoa according to package instructions. Set aside. Drizzle olive oil in a sauté pan. Add jalapeño, mango, garlic & sauté over medium heat until garlic starts to brown & mango soften. Stir in remaining ingredients, adding salt & pepper to taste. Let cook, mixing, for 5-10 minutes until all heated through. Plate and serve.
