It’s time for our main course, Zero Dark Turkey, our homage to Zero Dark Thirty.
Ingredients: 1 4-5 lbs. turkey breast, 2 cups plain yogurt, 1 chopped medium onion, 3-4 cloves garlic, 6-8 slivers fresh ginger, 2 tsps. curry, 1 tsp. cumin, 1 tsp. cilantro/coriander, 1/2 tsp. cinnamon, 1/4 cup lemon juice, 1/2 tsp-ish cayenne pepper, salt & pepper to taste
Directions: Preheat oven to 450°. In food processor or blender, add all ingredients except salt & pepper and the turkey (ha) and pulse until it’s a thick & creamy consistency. You can refrigerate as is for at least an hour and then spoon and rub over the turkey breast – or you can apply to turkey breast and refrigerate together – salt & pepper turkey to taste before adding marinade. Reserve half the marinade to serve later. Place turkey in the oven for about 1 hour or until the internal temperature at the thickest spot reaches 165°. Check after 30 minutes – if the top is already brown, place foil over the top.
Once it’s out of the oven, let it rest a few minutes, carve, plate with the marinade, and serve!
